Yaki soba:
Ingredients: thinly sliced beef, pork, or chicken; shredded carrots (1/2 bag), thinly sliced cabbage (about 1/4 cabbage), other veggies that interest you, soba noodles and sauce (locally made is best).
Stir fry the beef, then the veggies, then the noodles and sauce. Add a cup of water to the pan as you cook the noodles and sauce.
Enjoy!

Oh, one of my favorites! I was very sad when they stopped carrying the soba noodles here in Madison for a couple of years. We actually have a surprising number of Asian food markets, but none of them specialize in Japanese food.
Oh no! That's one thing I have wondered about. When we leave Japan, where will we find good Japanese food? Can you get them again now?
Yes, one of the Asian stores in town has started carrying it again. It's unfortunate, though, that there are no Japanese markets nearby - the photos of your shopping trip reminded me of the Japanese markets out in California. So tidy and with those little wrappings around the apples!
One option that I have not used, but is available, is ordering the groceries online - if only because I'd have to buy the soba noodles in bulk and as much as Dan and I love them, 12 packs is too many.

I wonder if you could freeze them...I'll have to try it before we leave. We won't want to give up soba after enjoying it so much here.
The Japanese grocery store is awesome. The tidy packaging extends to every department. Octopus tentacles on foam trays with plastic wrap over them just crack me up. The normalcy of octopus!
